  • 1 egg (for egg wash, beaten)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Peel the apples, then cut them in half through the stem. Use a melon baller or small spoon to scoop out the core and seeds.
  3. Place the apple halves cut-side down on the prepared baking sheet. Bake for 10 minutes (par-bake).
  4. In a small bowl, mix together the brown sugar, cinnamon, and nutmeg. Add the cold butter cubes and toss to coat.
  5. On a lightly floured surface, roll out the thawed puff pastry sheet into a 12×12-inch square. Cut it into four equal squares.
  6. Place one par-baked apple half, cut-side up, in the center of each pastry square. Fill the cavity with the brown sugar-butter mixture. Bring the corners of the pastry up to the top of the apple and pinch the edges together to seal. Place seam-side down on the baking sheet.
  7. Brush each dumpling with the beaten egg wash. Sprinkle with granulated sugar.
  8. Bake for 25-30 minutes, until the pastry is puffed and golden and the filling is bubbly.
  9. While the dumplings bake, make the caramel sauce: In a small saucepan over medium heat, melt the butter. Add the brown sugar and stir until dissolved. Slowly pour in the heavy cream, stirring constantly. Bring to a gentle simmer and cook for 3-4 minutes, until slightly thickened. Remove from heat and stir in the vanilla and salt. Let it cool slightly.
  10. Serve warm dumplings drizzled with caramel sauce.

Notes

Don’t skip the par-bake step for the apples. Keep the puff pastry cold for best results. Seal the edges well to prevent filling from leaking. The caramel sauce can be made up to a week ahead and stored in the fridge. For a dairy-free version, use vegan butter and coconut cream. For gluten-free, use gluten-free puff pastry.
