Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ยฝ cups (300g) light brown sugar, packed
  • ยฝ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 2 ยผ cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • ยฝ teaspoon salt
  • 1 cup (120g) dried cranberries
  • 1 cup (175g) white chocolate chips
  • 4 oz (113g) cream cheese, softened
  • ยผ cup (ยฝ stick) unsalted butter, softened
  • 1 ยฝ cups (180g) powdered sugar
  • ยฝ teaspoon vanilla extract
  • Pinch of salt
  • ยผ cup (30g) dried cranberries, roughly chopped (for topping)
  • 2 tablespoons white chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Lightly grease the parchment with cooking spray or butter.
  2. In a large mixing bowl, beat the softened butter, light brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes with an electric mixer on medium speed. Scrape down the sides of the bowl halfway through.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. The batter may look slightly curdled; this is normal.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix; a few streaks of flour are okay.
  6. Using a rubber spatula, gently fold in the dried cranberries and white chocolate chips until evenly distributed.
  7. Spread the batter evenly into the prepared pan. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake.
  8. Let the bars cool in the pan on a wire rack for at least 30 minutes. Then, using the parchment overhang, lift the entire block of blondie out of the pan and transfer to a cutting board. Cool completely before frosting.
  9. While the bars cool, make the frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating on low speed until incorporated. Add the vanilla and a pinch of salt. Beat on medium-high speed for 2-3 minutes until light, fluffy, and spreadable.
  10. Once the bars are completely cool, spread the cream cheese frosting evenly over the top. Sprinkle the roughly chopped dried cranberries and extra white chocolate chips over the frosting. Gently press them in so they stick.
  11. Place the frosted bars in the refrigerator for at least 30 minutes to firm up the frosting. Using a sharp knife, cut into 12 or 16 squares. For the classic triangular shape, cut each square in half diagonally. Wipe the knife clean between cuts for the neatest edges.

Notes

For best results, use room temperature ingredients. Chill the bars before cutting for clean slices. Toasting the dried cranberries for 3-4 minutes at 350ยฐF intensifies their flavor. Use a metal pan for even baking. Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 3 months.
