Creamy, protein-packed overnight oats with rich peanut butter flavor, perfect for a quick and satisfying breakfast. Ready in just 5 minutes of prep the night before.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole, oat, or almond)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, extra peanut butter drizzle, cinnamon

Instructions

  1. In a small bowl or liquid measuring cup, combine milk, peanut butter, protein powder, maple syrup, vanilla extract, and salt. Whisk until smooth.
  2. In a mason jar or airtight container, combine rolled oats and chia seeds. Stir to distribute.
  3. Pour the wet mixture over the dry ingredients and stir thoroughly until every oat is coated.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. Before serving, stir the oats well. If too thick, add a splash of milk.
  6. Add desired toppings and serve cold, or microwave for 30-45 seconds if preferred.

Notes

For best texture, use rolled oats (not instant or steel-cut). Mix peanut butter into milk first to avoid clumps. Chia seeds are essential for thickness. Flavors improve on day two. Store in fridge for up to 4 days; freeze for up to 3 months.
