Crispy bacon wrapped around a creamy, spicy jalapeno and cheese filling. These easy appetizer bites are perfect for parties and disappear fast.

  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 45 large jalapenos, seeded and finely diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 12 ounces bacon, cut into thirds

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, and place a wire rack on top if you have one.
  2. In a medium bowl, combine the softened cream cheese, shredded cheddar, diced jalapenos, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Mix until well combined.
  3. Using a small cookie scoop or your hands, roll the mixture into 1-inch balls. You should get about 18-20 bites.
  4. Cut each bacon strip into thirds. Take one piece of bacon and wrap it around a cream cheese ball, overlapping the ends slightly. Place the bite seam-side down on the prepared baking sheet or wire rack. Repeat with all the bites.
  5. Bake for 18-22 minutes, or until the bacon is crispy and golden brown. If not using a wire rack, flip the bites halfway through.
  6. Let the bites rest on the baking sheet for 5 minutes before serving.

Notes

For less heat, remove all seeds and membranes from jalapenos. For more heat, leave some seeds in. Regular-cut bacon works best. Assemble up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time if cold.
