Best Easy Beer Braised Bratwurst with Soft Pretzel Bites

  • 46 fresh bratwurst sausages (about 1.5 lbs / 680g)
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced (about 2 cups / 200g)
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 bottle or can (12 oz / 355 ml) dark beer (stout, porter, or dark lager)
  • 1 cup (240 ml) low-sodium beef broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish (optional)
  • 1 ยฝ cups (355 ml) warm water (about 110ยฐF / 43ยฐC)
  • 1 packet (2 ยผ teaspoons / 7g) active dry yeast
  • 1 tablespoon brown sugar
  • 3 ยฝ cups (440g) all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • ยฝ cup (120g) baking soda
  • 9 cups (2.1 L) water
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling

Instructions

  1. In a large mixing bowl, combine the warm water, brown sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy.
  2. Add the melted butter, salt, and 2 cups of flour. Mix until combined. Gradually add the remaining 1 ยฝ cups of flour, one half-cup at a time, until a soft dough forms.
  3. Knead the dough for 5-7 minutes until smooth and elastic. Place in a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, until doubled in size.
  4. While the dough rises, heat olive oil in a large skillet or Dutch oven over medium-high heat.
  5. Prick each bratwurst a few times with a fork. Brown them in the hot oil for 2-3 minutes per side. Transfer to a plate.
  6. Reduce heat to medium. Add sliced onion to the skillet and cook for 5-7 minutes until softened and golden.
  7. Add minced garlic and cook for 30 seconds until fragrant.
  8. Pour in dark beer and beef broth, scraping up browned bits. Stir in brown sugar and caraway seeds (if using). Return bratwurst to the skillet.
  9. Bring to a gentle simmer, then reduce heat to low, cover, and braise for 20-25 minutes until bratwurst are cooked through and tender.
  10. Remove lid, increase heat to medium-high, and simmer uncovered for 5-8 minutes to reduce and thicken the sauce. Season with salt and pepper.
  11. About 15 minutes before bratwurst are done, preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
  12. In a large pot, bring 9 cups of water and ยฝ cup baking soda to a rolling boil.
  13. Punch down the risen dough and turn onto a floured surface. Divide into 4 pieces. Roll each into a 1-inch thick rope and cut into 1-inch bite-sized pieces.
  14. Drop a handful of pretzel bites into the boiling baking soda water. Boil for 30-45 seconds. Remove with a slotted spoon and transfer to the prepared baking sheet, spacing 1 inch apart.
  15. Repeat with remaining dough. Brush boiled pretzel bites with egg wash and sprinkle generously with coarse sea salt.
  16. Bake pretzel bites for 10-12 minutes until deep golden brown and glossy.
  17. Serve bratwurst hot from the skillet, topped with braised onions and reduced beer sauce, with warm pretzel bites on the side.

Don’t skip browning the bratwurst for deep flavor. Use a dark, malty beer (stout, porter, or dark lager) to avoid bitterness. The baking soda bath is crucial for chewy pretzel texture.
