  • 4 oz brie, at room temperature
  • 4 oz blue cheese, crumbled or sliced
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, sliced
  • 2 oz soppressata or chorizo (optional)
  • 1/2 cup mixed olives (kalamata and green)
  • 1/4 cup cornichons or pickled vegetables
  • 1/4 cup honey or fig jam
  • 1/4 cup dried apricots or figs
  • 1/4 cup almonds or walnuts, toasted
  • 1 small baguette, sliced and toasted, or a box of crackers
  • 1/2 cup red grapes, washed and left in small clusters
  • Fresh rosemary or thyme sprigs for garnish (optional)

Instructions

  1. Prepare the board: Start with a clean, dry board. If using a wooden board, you can rub it with a little mineral oil for a nice sheen. Place your small bowl for honey or jam on the board first.
  2. Place the cheeses: Arrange the three cheeses evenly around the board. Place the brie in one corner, the cheddar in another, and the blue cheese in a third spot. Leave space between them for other ingredients. Make sure the brie is at room temperature.
  3. Add the meats: Fold or roll the prosciutto slices into loose ribbons and place them near the brie. Fold the salami slices in half and then in half again, creating little triangles, and place them near the cheddar.
  4. Fill in with accompaniments: Spoon the olives and cornichons into small piles around the board. Add the dried apricots and nuts in small clusters. Scatter the grapes in small bunches.
  5. Add the base: Arrange the toasted baguette slices or crackers around the edges of the board, overlapping slightly.
  6. Drizzle and garnish: Spoon the honey into the small bowl, or drizzle it directly over the brie. Garnish with fresh rosemary or thyme sprigs.
  7. Final check: Step back and look at your board. Fill any empty spots with extra nuts or a few more crackers. The goal is a full, abundant look without being overcrowded.

Let cheeses sit at room temperature for at least 30 minutes before serving for best flavor. Avoid overloading the board; leave space between ingredients. Use small bowls for sticky items like honey and olives to keep the board tidy.
