Ingredients

Scale
  • 1.5 lbs (680g) fresh green beans, trimmed and cut into 2-inch pieces
  • 1 can (10.5 oz / 298g) cream of mushroom soup
  • 1/2 cup (120ml) whole milk
  • 1 tablespoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3–4 large shallots (about 6 oz / 170g), thinly sliced into rings
  • 1/4 cup (30g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) vegetable oil (for frying)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and trim the fresh green beans, cutting them into 2-inch pieces. Pat them dry with a clean kitchen towel.
  3. In a large mixing bowl, combine the cream of mushroom soup, whole milk, soy sauce, black pepper, and garlic powder. Whisk until smooth.
  4. Add the trimmed green beans to the bowl and toss until evenly coated.
  5. Pour the green bean mixture into a greased 8×8-inch baking dish and spread into an even layer.
  6. Bake for 25-30 minutes, until the sauce is bubbly around the edges and the green beans are tender but still have a slight bite.
  7. While the casserole bakes, prepare the crispy shallots: Peel and thinly slice the shallots into rings. In a small bowl, toss the shallot rings with flour and salt until well coated.
  8. In a large skillet, heat the vegetable oil over medium-high heat. Test by dropping a small piece of shallot in; it should sizzle immediately.
  9. Carefully add the coated shallot rings to the hot oil in a single layer (work in batches if needed). Fry for 2-3 minutes, stirring occasionally, until golden brown and crispy.
  10. Use a slotted spoon to transfer the fried shallots to a plate lined with paper towels. Sprinkle with a little extra salt while still hot.
  11. Once the casserole is done, remove from the oven and sprinkle the crispy shallots generously over the top. Serve immediately.

Notes

For best results, fry the shallots just before serving to keep them crunchy. If prepping ahead, store fried shallots in an airtight container at room temperature and add right before serving. The casserole can be assembled a day in advance; add 10 minutes to baking time if starting from cold.
