These festive Santa pancakes with a strawberry beard are a quick and easy Christmas morning breakfast that looks impressive but takes only about 20 minutes. The fluffy buttermilk pancakes are topped with fresh strawberries, whipped cream, and chocolate chips to create a jolly Santa face.

Ingredients

Scale
  • 1 ½ cups all-purpose flour (spooned and leveled)
  • 3 ½ teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk
  • 1 large egg (room temperature)
  • 3 tablespoons unsalted butter, melted (plus extra for griddle)
  • 1 teaspoon vanilla extract
  • 6–8 fresh strawberries, sliced thinly lengthwise
  • 1 cup whipped cream (homemade or store-bought)
  • 12–16 mini chocolate chips
  • 1 small strawberry, halved (for nose)
  • Powdered sugar for dusting (optional)

Instructions

  1. Make the pancake batter: In a large bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl or measuring cup, whisk the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are fine. Let the batter rest for 5 minutes while your griddle heats up.
  2. Heat your griddle: Set your griddle or skillet over medium heat. To test if it’s ready, flick a few drops of water onto the surface. If they dance and sizzle, you’re good to go. Lightly butter the surface.
  3. Cook the pancakes: Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip carefully and cook for another 1-2 minutes, until golden brown. Transfer to a plate and keep warm. You should get about 6-8 pancakes.
  4. Prepare the strawberries: While the pancakes are cooking, wash and dry your strawberries. Slice them thinly lengthwise. Set aside the best slices for the beard.
  5. Whip the cream: If making homemade whipped cream, pour 1 cup of heavy cream into a chilled bowl with 1 tablespoon of powdered sugar and ½ teaspoon of vanilla extract. Whip until stiff peaks form.
  6. Assemble Santa: Place one pancake on a plate. Arrange the strawberry slices in a fan shape at the bottom of the pancake to create the beard. Place a small dollop of whipped cream at the top of the beard. Add two mini chocolate chips for eyes and one for the nose. Use a piping bag or spoon to add a whipped cream mustache and a little hat on top. Dust with powdered sugar.
  7. Serve immediately: These pancakes are best eaten right away while the strawberries are fresh and the whipped cream is cold.

Notes

The griddle temperature is key—medium heat works best. Don’t overmix the batter; lumps are okay. Slice strawberries at the last minute to prevent weeping. Make whipped cream stiff for better assembly. For batch cooking, cook all pancakes first and keep warm in a 200°F oven, then assemble all at once.
