These soft, pillowy eggnog snickerdoodle cookies combine the classic tang of cream of tartar with warm, spiced eggnog flavor. They’re quick to make, require no chilling, and are perfect for holiday gatherings.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar, divided
  • ⅓ cup full-fat eggnog
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 2 tablespoons ground cinnamon (for coating)
  • 1 teaspoon ground nutmeg (for coating)

Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg, vanilla extract, and ⅓ cup eggnog until just combined.
  4. In a separate bowl, whisk together 2 ¾ cups flour, 2 teaspoons cream of tartar, 1 teaspoon baking soda, ½ teaspoon salt, 1 teaspoon nutmeg, and ½ teaspoon cinnamon.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  6. In a small bowl, mix together ½ cup granulated sugar, 2 tablespoons cinnamon, and 1 teaspoon nutmeg for the coating.
  7. Using a cookie scoop or tablespoon, scoop about 1.5 tablespoons of dough. Roll into a ball, then coat in the cinnamon-sugar mixture.
  8. Place dough balls about 2 inches apart on prepared baking sheets.
  9. Bake for 10-12 minutes, until edges are set and lightly golden. Centers will look slightly underdone.
  10. Let cookies rest on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use full-fat eggnog and ensure butter and egg are at room temperature. If dough is too sticky, chill for 15-20 minutes. Store in an airtight container at room temperature for up to 5 days; place a slice of bread in the container to keep cookies soft. Freeze baked cookies for up to 3 months.
