A creamy, cheesy broccoli cheddar soup made in the slow cooker with simple, wholesome ingredients. This healthier version uses Greek yogurt and sharp cheddar for rich flavor without the guilt, topped with crispy sourdough croutons.

  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups low-sodium vegetable broth

  • 4 cups fresh broccoli florets (about 2 medium heads)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon nutmeg
  • 2 cups sharp cheddar cheese, freshly grated
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 3 cups sourdough bread, cubed (stale bread works best)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Sauté the aromatics: In a large skillet over medium heat, melt the butter. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the onion is translucent and the carrots start to soften. Add the minced garlic and cook for another minute until fragrant.
  2. Transfer to the crockpot: Scrape the sautéed vegetables into your slow cooker. Add the vegetable broth, water, broccoli florets, salt, pepper, smoked paprika, and nutmeg. Stir everything together. The liquid should just cover the vegetables—if it doesn’t, add a little more water.
  3. Cook on low or high: Cover and cook on low for 4-5 hours or on high for 2-3 hours. The soup is ready when the broccoli is tender and easily pierced with a fork.
  4. Blend the soup: Once the vegetables are tender, use an immersion blender to puree the soup until smooth. If you like a chunkier texture, blend only half of it. If using a regular blender, let the soup cool for 10 minutes, then blend in batches.
  5. Add the cheese and yogurt: Turn off the slow cooker. Stir in the Dijon mustard, then gradually add the shredded cheddar cheese, a handful at a time, stirring until it’s fully melted before adding more. Once all the cheese is incorporated, stir in the Greek yogurt.
  6. Make the croutons: While the soup finishes, preheat your oven to 375°F (190°C). Toss the cubed sourdough bread with olive oil, garlic powder, and salt. Spread them in a single layer on a baking sheet. Bake for 10-12 minutes, tossing halfway through, until golden and crispy. If using Parmesan, sprinkle it on during the last 2 minutes of baking.
  7. Taste and adjust: Give the soup a final taste. Add more salt, pepper, or a pinch of nutmeg if needed. If it’s too thick, stir in a splash of milk or broth to thin it out.
  8. Serve: Ladle the soup into bowls and top with a generous handful of sourdough croutons. Garnish with fresh parsley or extra cracked black pepper if desired.

Notes

For best results, grate your own cheese from a block—pre-shredded cheese contains anti-caking agents that can make the soup grainy. Always add cheese off the heat to prevent it from seizing. The soup tastes even better the next day as flavors meld. Store croutons separately to maintain crunch.
