  • 1 pound ground breakfast sausage (mild or sage variety)
  • 4 tablespoons unsalted butter
  • 2 cups yellow onion, diced (about 1 large onion)
  • 1 ยฝ cups celery, diced (about 34 stalks)
  • 3 cloves garlic, minced
  • 2 teaspoons dried sage (or 1 tablespoon fresh, chopped)
  • 1 teaspoon dried thyme
  • ยฝ teaspoon dried rosemary
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon salt (adjust based on sausage saltiness)
  • 2 cups low-sodium chicken broth (or turkey broth)
  • 2 large eggs, lightly beaten
  • ยผ cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Grease a 9-inch square baking pan or 8-inch cast iron skillet with butter.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk eggs, buttermilk, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and stir with a wooden spoon until just combined. Do not overmix.

  11. Add minced garlic, dried sage, thyme, rosemary, black pepper, and salt. Stir and cook for 1 minute until fragrant. Remove from heat and let cool slightly.
  12. In a very large mixing bowl, combine toasted cornbread cubes and cooked sausage.
  13. Add cooked vegetable mixture and toss gently with a spatula to distribute evenly.
  14. In a small bowl, whisk together chicken broth and beaten eggs until smooth.
  15. Pour broth mixture over cornbread mixture. Fold gently with a spatula until combined. Mixture should be moist but not soupy.
  16. Transfer stuffing to a greased 9×13-inch baking dish and spread evenly.
  17. For immediate baking: Cover tightly with foil and bake at 350ยฐF (175ยฐC) for 30 minutes. Remove foil and bake 15-20 minutes more until top is golden and crispy.
