Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 pounds total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil (optional)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)
  • Red pepper flakes for garnish (optional)

Instructions

  1. Pat the chicken dry with paper towels.
  2. Season both sides of the chicken with salt and pepper. Let sit at room temperature for 10 minutes.
  3. In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and sesame oil (if using). Set aside.
  4. Heat a large skillet over medium-high heat and add olive oil. Heat until shimmering.
  5. Place chicken thighs skin-side down in the hot skillet. Cook undisturbed for 6-7 minutes until skin is deep golden and crispy.
  6. Flip chicken and cook for another 5 minutes.
  7. Remove chicken to a plate. Leave rendered fat in the pan.
  8. Reduce heat to medium-low and pour the honey garlic sauce into the pan. Scrape up any browned bits from the bottom.
  9. Stir the cornstarch slurry and pour it into the sauce. Stir continuously for about 1 minute until sauce thickens and becomes glossy.
  10. Return chicken to the pan, skin-side up. Spoon sauce over each piece. Simmer for 3-5 minutes until chicken is cooked through (internal temperature of 165ยฐF).
  11. Remove from heat and let rest for 2-3 minutes.
  12. Garnish with sesame seeds, chopped green onions, and red pepper flakes if desired.

Notes

For extra sticky sauce, remove chicken after cooking and let sauce simmer alone for 1-2 minutes before pouring back over. Watch the garlic to prevent burning. Pat chicken very dry for crispiest skin. Leftovers keep in refrigerator for up to 4 days and freeze for up to 3 months.
