Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×9-inch baking dish with butter or non-stick spray.
  2. Peel, pit, and slice 5-6 ripe peaches to yield about 4 cups. Toss them in a large bowl with 1/2 cup sugar, 2 tablespoons cornstarch, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and 1 tablespoon lemon juice. Set aside to macerate.
  3. In a medium skillet over medium heat, melt 1/2 cup unsalted butter. Stir frequently until it foams and turns golden brown with a nutty aroma (about 4-6 minutes). Remove from heat immediately.
  4. In a separate bowl, whisk together 1 cup flour, 1/2 cup sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  5. In another small bowl, beat together 1/2 cup whole milk and 1 large egg. Slowly pour the browned butter into the wet mixture, whisking to combine.
  6. Fold the wet ingredients into the dry ingredients just until combined; do not overmix. The batter will be thick but pourable.
  7. Pour the peach mixture with its juices into the prepared baking dish. Dollop the batter over the peaches in spoonfuls, allowing some peach juice to peek through.
