Ingredients

  • Cherry tomatoes (ripe, firm)
  • Fresh mozzarella balls (Bocconcini), recommended BelGioioso brand
  • Fresh basil leaves (whole, bright green, tender)
  • Extra virgin olive oil
  • Balsamic glaze (ready-made or homemade balsamic reduction)
  • Wooden skewers or toothpicks (short, about 4 inches)

Instructions

  1. Wash and dry the cherry tomatoes and basil leaves thoroughly to prevent sogginess (about 5 minutes).
  2. Line up wooden skewers on a clean surface. Optionally, lightly brush tomatoes with olive oil for a glossy finish (about 5 minutes).
  3. Assemble the caterpillar bites by threading one cherry tomato, followed by a folded basil leaf, then a mozzarella ball. Repeat this pattern until you have 5-7 pieces per skewer (about 10 minutes).
  4. Arrange the skewers side by side on a serving platter, gently curving them to mimic a caterpillar’s body (about 2 minutes).
  5. Drizzle balsamic glaze lightly over the skewers, then finish with a sprinkle of olive oil (about 2 minutes).
  6. Season to taste with flaky sea salt and freshly ground black pepper.
