Tender pork ribs coated with a tangy, mustard-based Carolina Gold BBQ sauce that balances sharpness, sweetness, and smoky spice for a classic Southern flavor.

  • 3 to 4 pounds pork ribs (baby back or spare ribs)
  • Salt and freshly ground black pepper (to taste)
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 cup yellow mustard (preferably Gulden’s)
  • ½ cup apple cider vinegar
  • ¼ cup honey
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (adjust to taste)
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions

  1. Remove the silver skin from the back of the ribs if not already done. Pat ribs dry with paper towels. (5 minutes)
  2. Combine salt, black pepper, smoked paprika, and garlic powder in a small bowl. Rub seasoning evenly over both sides of ribs. Let sit at room temperature for 20 minutes.
  3. In a medium saucepan over medium heat, whisk together yellow mustard, apple cider vinegar, honey, brown sugar, Worcestershire sauce, hot sauce, smoked paprika, black pepper, and salt. Bring to a gentle simmer, stirring frequently. Simmer for 5 minutes until slightly thickened. Remove from heat and set aside.
  4. Preheat oven to 275°F (135°C) or prepare grill with a two-zone fire at medium-low heat.
  5. For oven: Place ribs on a foil-lined baking sheet, cover tightly with foil, and bake for 2.5 to 3 hours until tender. For grill: Place ribs bone-side down over indirect heat, cover, and cook for 2.5 to 3 hours, checking occasionally.
  6. Remove ribs from heat and brush a generous layer of Carolina Gold BBQ sauce over both sides. For oven ribs, increase heat to 400°F (205°C) and return ribs uncovered for 10-15 minutes to caramelize the sauce. On the grill, move ribs over direct heat for a few minutes per side, watching closely to avoid burning.
  7. Let ribs rest for 10 minutes after cooking to allow juices to redistribute. Cut between bones and serve warm with extra sauce on the side.

Notes

Remove silver skin from ribs for tenderness. Wrap ribs tightly in foil during cooking to lock in moisture. Adjust sweetness of sauce with honey or brown sugar to balance tanginess. Use a spray bottle with apple cider vinegar when grilling to keep ribs moist. Sauce can be made ahead and stored refrigerated for up to a week. Smoking ribs before saucing adds extra depth of flavor.
