Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine rolled oats, all-purpose flour, ground cinnamon, salt, and baking powder. Stir well to evenly distribute.
  3. Peel and finely chop the apple into small pieces, about 1 cup.
  4. In a separate bowl, whisk together brown sugar, melted unsalted butter, honey, and vanilla extract until smooth and glossy.
  5. Pour the wet mixture into the dry ingredients and toss gently to coat. Add chopped apples and optional nuts or dried fruits. Stir until just combined; do not overmix.
  6. Transfer the mixture into the prepared pan. Press firmly and evenly into the pan using a spatula or dampened hands to ensure chewy bars that hold together well.
