  • 2 tablespoons unsweetened cocoa powder (Dutch-processed preferred)
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • 4 ounces (113 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • ยฝ cup (110 g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons red food coloring (gel preferred)
  • 1 ยฝ cups (270 g) white chocolate chips

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and cream cheese with an electric mixer until smooth and fluffy, about 2-3 minutes.
  4. Add granulated sugar and brown sugar to the butter mixture and beat until light and creamy, about 3 minutes.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then add vanilla extract.
  6. Add the red food coloring and stir until the dough is evenly colored.
  7. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding gently until just combined. Avoid overmixing.
  8. Gently fold in the white chocolate chips until evenly distributed.
  9. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets. Slightly flatten each ball with your fingers.
  10. Bake for 10-12 minutes until edges are set but centers are still soft. Remove from oven and let cool on baking sheets for 5 minutes.
  11. Transfer cookies to wire racks to cool completely.

Notes

Use gel food coloring for vibrant color without thinning the dough. Chill dough for 30 minutes before baking if kitchen is warm to prevent spreading. Rotate baking sheets halfway through baking for even results. Avoid overmixing to keep cookies tender. For dairy-free or gluten-free options, substitute cream cheese and butter with dairy-free versions and use gluten-free flour blend.
