A creamy, comforting soup made with roasted acorn squash and apples, balanced with savory depth and a hint of ginger. Perfect for fall gatherings or a quiet weeknight meal.

Ingredients

Scale
  • 1 medium acorn squash (about 2 pounds / 900g)
  • 2 medium apples (such as Honeycrisp, Fuji, or Gala)
  • 1 small yellow onion, chopped (about 1 cup / 150g)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 2 tablespoons butter (or olive oil for dairy-free)
  • 3 cups vegetable broth (720 ml)
  • 1/2 cup coconut milk (120 ml)
  • 1 tablespoon maple syrup (optional)
  • Salt and black pepper to taste
  • Optional toppings: roasted pumpkin seeds, a drizzle of coconut milk, fresh thyme, or a sprinkle of cinnamon

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut acorn squash in half, scoop out seeds, and cut into 1-inch chunks. Core apples and cut into 1-inch chunks. Arrange on baking sheet, drizzle with olive oil or melted butter, season with salt and pepper, and toss to coat.
  3. Roast for 30-35 minutes, flipping halfway, until squash is tender and edges are golden brown.
  4. While roasting, melt butter in a large pot over medium heat. Add onion and cook 3-4 minutes until translucent. Add garlic and ginger, cook 1 minute until fragrant.
  5. Add roasted squash and apples to the pot. Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Remove from heat. Use an immersion blender to puree until smooth. (Alternatively, let cool slightly and blend in batches in a regular blender.)
  7. Stir in coconut milk and maple syrup (if using). Season with salt and pepper to taste. Adjust consistency with additional broth if needed.
  8. Serve hot with desired toppings.

Notes

Don’t skip roasting the squash and apples—it concentrates natural sugars and adds depth. The soup can be made ahead and tastes even better the next day. For a vegan version, use olive oil instead of butter and full-fat coconut milk. For a spicy kick, add a pinch of cayenne or a chopped jalapeño when sautéing aromatics.
