These soft and chewy apple cider cookies are packed with concentrated apple flavor from reduced cider and topped with a sweet cinnamon glaze. They’re the perfect fall treat, ready in about 35 minutes with simple pantry ingredients.

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice

  • ¾ cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar, sifted
  • 23 tablespoons milk or heavy cream
  • 1 teaspoon ground cinnamon (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Let it bubble for about 12–15 minutes, stirring occasionally, until reduced to about ¼ cup. Pour into a small bowl and let cool completely.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, allspice, and salt. Set aside.
  4. In a large bowl, beat softened butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2–3 minutes. Scrape down the sides halfway through.
  5. Beat in the egg, vanilla extract, and cooled reduced apple cider syrup until just combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just incorporated. Do not overmix.
  7. Cover the bowl and refrigerate the dough for 20–30 minutes (optional but recommended).
  8. Scoop rounded tablespoons of dough and place them about 2 inches apart on the prepared baking sheets. Bake for 10–12 minutes, until edges are set and lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  9. While cookies cool, whisk together powdered sugar, 2 tablespoons of milk, cinnamon, and vanilla extract in a small bowl. Add more milk a teaspoon at a time until pourable.
  10. Once cookies are completely cool, drizzle glaze over the tops. Let set for 15–20 minutes before serving.

Notes

For best results, reduce the apple cider to exactly ¼ cup to avoid spreading. Chill the dough for 20–30 minutes to prevent flat cookies. Do not overbake; cookies should be soft and chewy. The flavor deepens after a day or two.
