This cozy brown sugar pineapple glazed ham is the perfect balance of sweet, salty, and sticky. With a caramelized brown sugar crust and tangy pineapple, it’s a crowd-pleasing holiday favorite that comes together in under 2 hours.

Ingredients

Scale
  • 1 (8-10 lb) bone-in spiral-cut ham (fully cooked)
  • 20–30 whole cloves
  • 1 cup packed light brown sugar
  • 1 can (20 oz) pineapple rings in juice, juice reserved
  • 1/4 cup pineapple juice (reserved from can)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground cloves (optional)

Instructions

  1. Take the ham out of the refrigerator 30 minutes before cooking to bring to room temperature. Remove packaging, rinse briefly, and pat dry. Place flat-side down in a roasting pan.
  2. If ham is not pre-scored, use a sharp knife to cut a diamond pattern about 1/4-inch deep across the entire surface, spacing cuts 1 inch apart.
  3. Push a whole clove into the center of each diamond where cuts intersect, just enough to stand upright.
  4. In a small saucepan over medium heat, combine brown sugar, 1/4 cup reserved pineapple juice, Dijon mustard, butter, cinnamon, and ground cloves. Whisk until butter melts and sugar dissolves (3-4 minutes). Simmer 2 minutes until slightly thickened. Remove from heat.
  5. Brush about one-third of the glaze all over the ham, getting into scored cuts. Secure pineapple rings onto the ham using toothpicks in a single layer over top and sides.
  6. Preheat oven to 325°F (163°C). Cover ham loosely with aluminum foil (tented so it doesn’t touch pineapple). Roast for 1 hour.
  7. Remove foil, baste ham with pan juices and remaining glaze. Return to oven uncovered, roasting another 30-45 minutes, basting every 15 minutes.
  8. Insert meat thermometer into thickest part (avoiding bone). For fully cooked ham, target internal temperature of 140°F (60°C). If not there, continue roasting uncovered, checking every 10 minutes.
  9. Once at temperature, switch oven to broil and caramelize top for 3-5 minutes, watching carefully to prevent burning. Glaze should be bubbling and deep golden brown.
  10. Remove from oven and let rest 15 minutes. Remove toothpicks and loose pineapple rings. Carve along spiral cuts or slice against the grain into 1/4-inch thick pieces. Spoon remaining pan juices over sliced ham before serving.

Notes

For best results, let ham come to room temperature before cooking. Baste generously every 15 minutes during the uncovered phase. Watch the sugar carefully under the broiler to prevent burning. Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
