Cozy Christmas Morning Overnight Cinnamon Rolls

These overnight cinnamon rolls are made the night before, so you can sleep in and still enjoy fresh, warm rolls on Christmas morning. The dough is soft and pillowy, filled with a cinnamon-brown sugar swirl, and topped with a creamy cream cheese icing.

  • 1 cup whole milk, warm (110ยฐF)
  • 1/3 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 4 cups all-purpose flour (approx.)
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, very soft
  • 1 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • Pinch of salt
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk or heavy cream

Instructions

  1. Warm the milk to about 110ยฐF. Pour into the bowl of a stand mixer and sprinkle yeast and 1 tablespoon of the granulated sugar over the top. Let sit for 5-10 minutes until foamy.
  2. Add remaining sugar, melted butter, eggs, and salt to the yeast mixture. Stir to combine. Add 3 1/2 cups flour and mix on low with dough hook until a shaggy dough forms. Add remaining flour 1 tablespoon at a time until dough pulls away from sides of bowl.
  3. Knead on medium-low speed for 5-7 minutes (or 10 minutes by hand) until smooth and elastic.
  4. Shape dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm spot for 1-1 1/2 hours until doubled.
  5. Meanwhile, mix softened butter, brown sugar, cinnamon, and pinch of salt into a spreadable paste.
  6. Punch down dough and roll out on a floured surface into a 16×12-inch rectangle.
  7. Spread cinnamon-butter mixture evenly over dough, leaving a 1-inch border at the top edge.
  8. Starting from the bottom long edge, roll dough tightly into a log. Pinch seam to seal.
  9. Cut log into 12 equal pieces (about 1 1/2 inches thick). Use dental floss for clean cuts.
  10. Place rolls cut-side down in a greased 9×13-inch baking pan.
  11. Cover tightly with plastic wrap and refrigerate for at least 8 hours or up to 18 hours.
  12. In the morning, remove pan from fridge and let sit at room temperature for 30 minutes. Preheat oven to 350ยฐF.
  13. Bake for 25-30 minutes until golden brown and centers are cooked through (internal temp 190ยฐF). Tent with foil after 20 minutes if browning too quickly.
  14. While rolls bake, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and 2 tablespoons milk/cream. Beat until creamy.
  15. Let rolls cool 5-10 minutes, then spread icing over warm rolls. Serve warm.

Notes

For best results, use whole milk and let eggs come to room temperature. If dough is too sticky, add flour 1 tablespoon at a time. For clean cuts, use unflavored dental floss. Let rolls rest 30 minutes at room temperature before baking to ensure even baking.
