Cozy Crockpot Lasagna Soup for Chilly Nights

A rich, tomatoey soup with all the comforting flavors of lasagna, made effortlessly in a slow cooker. Perfect for cold evenings, this hearty soup features seasoned ground beef, tender lasagna noodles, and a melty cheese topping.

  • 1 pound ground beef (85/15 recommended)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 to 5 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes (San Marzano preferred)
  • 2 tablespoons tomato paste
  • 4 cups low-sodium beef broth (chicken broth works too)
  • 8 to 10 lasagna noodles, broken into 2-inch pieces
  • 3 cups fresh spinach (optional)
  • 1 cup whole milk ricotta cheese (for serving)
  • 1 cup shredded mozzarella cheese (for serving)
  • ½ cup grated Parmesan cheese (for serving)
  • Fresh basil or parsley for garnish (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (for browning)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned all over (6 to 8 minutes). Drain excess fat, leaving about 1 tablespoon in the pan.
  2. Add diced onion to the skillet with the beef. Cook for 3 to 4 minutes until softened. Add minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 30 seconds until fragrant. Season with salt and pepper.
  3. Transfer beef and onion mixture to a 6-quart or larger slow cooker. Add crushed tomatoes, tomato paste, and beef broth. Stir until tomato paste is fully incorporated.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  5. About 30 minutes before serving, stir in broken lasagna noodles, ensuring they are submerged. Cover and cook on high for 20 to 30 minutes until tender but still al dente.
  6. If using spinach, stir it in during the last 5 minutes of cooking. Adjust salt and pepper to taste.
  7. While noodles cook, mix ricotta, mozzarella, and Parmesan in a small bowl. Set aside.
  8. Ladle hot soup into bowls. Top each with a generous dollop of the cheese mixture and garnish with fresh basil or parsley if desired.

Notes

For leftovers, cook noodles separately and add to individual bowls when serving to prevent them from becoming too soft. The soup thickens as it sits; add a splash of broth when reheating. For freezing, freeze without noodles and cook fresh noodles when reheating. Day two flavors are even better.
