Tender, fall-apart pork chops simmered in a rich, savory onion gravy made with caramelized onions and a secret ingredient. This easy slow cooker recipe is the ultimate comfort food for cozy evenings.

Ingredients

Scale
  • 4 bone-in pork chops, about 1-inch thick
  • 2 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup low-sodium beef broth
  • 1 packet onion soup mix (Lipton’s recommended)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side until golden brown. Transfer to the slow cooker.
  3. Reduce heat to medium, add butter to the skillet, then add sliced onions. Cook for 5-7 minutes until soft and starting to caramelize.
  4. Add minced garlic and cook for 1 minute until fragrant. Sprinkle flour over the onions and stir constantly for 1-2 minutes.
  5. Slowly pour in beef broth while stirring, scraping up browned bits from the pan. Bring to a simmer until thickened.
  6. Stir in onion soup mix, Worcestershire sauce, dried thyme, and bay leaves. Adjust salt and pepper to taste.
  7. Pour the onion gravy over the pork chops in the slow cooker, ensuring chops are mostly submerged.
  8. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until pork is fork-tender.
  9. Remove bay leaves. Let pork chops rest in gravy for 10 minutes before serving. Serve hot with gravy spooned over the top.

Notes

Searing the pork chops first is crucial for flavor. Use bone-in chops for best moisture. If gravy is too thin, thicken with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). For gluten-free, use gluten-free flour or cornstarch. For dairy-free, substitute butter with olive oil or plant-based butter.
