Ingredients

  • Brie wheel (8 ounces)
  • Aged cheddar (6 ounces)
  • Goat cheese log (4 ounces)
  • Gouda or smoked gouda (4 ounces)
  • Prosciutto (4 ounces)
  • Salami (4 ounces)
  • Candy corn (1 cup)
  • Mini marshmallows (1/2 cup)
  • Chocolate-covered pretzels (1 cup)
  • Caramel popcorn (1 cup)
  • Green apple (1 large)
  • Red grapes (1 cup)
  • Roasted almonds (1/2 cup)
  • Pumpkin seeds (1/4 cup)
  • Buttery crackers (about 20)
  • Baguette (1 small)
  • Pumpkin butter (1/4 cup)
  • Honey (2 tablespoons)
  • Fresh rosemary sprigs (optional)
  • Dried orange slices (optional)
  • Black licorice strings (optional)

Instructions

  1. Prep your cheeses (5 minutes): Take the brie out of the fridge 30 minutes before assembling so it softens to room temperature. Slice the aged cheddar into thin triangles or cubes. Slice the gouda into similar-sized pieces. Leave the goat cheese log wholeโ€”you’ll crumble it later.
  2. Toast the baguette (5 minutes): Slice the baguette into 1/4-inch rounds. Arrange on a baking sheet and toast at 350ยฐF for 5-7 minutes, or until just golden around the edges. Let them cool completely before adding to the board.
  3. Prep the fruits (5 minutes): Slice the green apple into thin wedges and toss with a little lemon juice to prevent browning. Wash and dry the grapes. Leave some on the stem for visual interest.
  4. Arrange the large items first (3 minutes): Place your brie wheel somewhere near the center of the board, slightly off to one side. Put the goat cheese log next to it. Set the small bowls for candy corn, pumpkin butter, and honey in different spots around the board.
  5. Add the meats (2 minutes): Fold the prosciutto slices into loose ribbons and arrange them near the brie. Fan out the salami slices in a small cluster.
  6. Place the hard cheeses (2 minutes): Arrange the cheddar and gouda pieces in separate clusters. Leave space between cheese types so flavors don’t mix too much.
  7. Fill in with crackers and bread (2 minutes): Scatter the buttery crackers and toasted baguette slices around the cheeses. Create little pathways for people to reach different items.
  8. Add the candy corn and sweets (3 minutes): Pour the candy corn into one of your small bowls or pile it directly on the board in a small mound. Add the mini marshmallows in a small pile nearby. Scatter the chocolate-covered pretzels and caramel popcorn in the remaining empty spaces.
  9. Fill gaps with fruits and nuts (2 minutes): Tuck the apple slices and grape clusters into any empty spots. Sprinkle the almonds and pumpkin seeds around for texture and color.
  10. Add the finishing touches (2 minutes): Drizzle honey over the brie wheel. Spoon the pumpkin butter into its bowl. Arrange rosemary sprigs around the edges. If you have dried orange slices, tuck them in for color.
  11. Serve immediately or refrigerate (optional): If you’re serving within an hour, leave it out. If you’re prepping ahead, cover loosely with plastic wrap and refrigerate for up to 4 hours. Take it out 20 minutes before serving to let the cheese come back to room temperature.

Notes

Take brie out of fridge 30 minutes before assembling for best texture. Keep candy corn separate from moist ingredients to prevent stickiness. Add crackers and pretzels just before serving to keep them crunchy. The board is best served the day it’s made.
