Warm, melted brie mingling with sweet honey and crunchy toasted pecans in a buttery phyllo cup. These quick and easy appetizer bites are perfect for holiday parties, cozy nights in, or any gathering where you want to impress without the stress.

Ingredients

Scale
  • 1 package (15 count) frozen mini phyllo tart shells
  • 8 ounces brie cheese, rind removed and cut into ½-inch cubes
  • ⅓ cup chopped pecans, toasted
  • 3 tablespoons honey
  • 1 tablespoon fresh thyme leaves (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Arrange the frozen phyllo tart shells on a parchment-lined baking sheet. Do not thaw them.
  2. Toast the pecans: Place a small skillet over medium heat. Add the chopped pecans and cook, stirring frequently, for 2-3 minutes until fragrant and lightly golden. Transfer to a small bowl and let cool slightly.
  3. Prep the brie: If the brie is very soft, freeze for 10 minutes first. Using a sharp knife, slice off the white rind from all sides. Cut the soft cheese into small cubes, about ½-inch each.
  4. Assemble the bites: Place 2-3 small cubes of brie into each phyllo cup. Sprinkle a small pinch of toasted pecans on top of the brie in each cup, pressing down gently.
  5. Drizzle with honey: Using a small spoon, drizzle about ½ teaspoon of honey over the brie and pecans in each cup.
  6. Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, until the brie is melted and bubbly and the phyllo cups are golden brown and crisp.
  7. Finish and serve: Remove from the oven and let cool for 2-3 minutes on the baking sheet. Sprinkle fresh thyme leaves over the top (if using) and add a tiny pinch of flaky sea salt to each bite. Serve warm.

Notes

Best served within 15 minutes of baking. Can be assembled up to 2 hours ahead and refrigerated before baking. For make-ahead, assemble completely (minus thyme and salt), refrigerate, then bake just before serving. Add garnishes after baking. To reheat leftovers, place on a baking sheet in a 350°F oven for 5-7 minutes. Avoid microwave as it makes phyllo soggy.
