Ingredients

Scale
  • 2 boxes (8.5 oz each) Jiffy Corn Muffin Mix
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup sour cream, full-fat
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) cream-style corn
  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup shredded cheddar cheese
  • Optional: 1/4 cup chopped jalapeños (fresh or pickled)
  • Optional: 1/2 cup cooked and crumbled bacon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Melt the butter in a microwave-safe bowl in 30-second intervals. Let it cool for 2-3 minutes.
  3. In a large mixing bowl, whisk the eggs until light and frothy, about 30 seconds.
  4. Add the sour cream and cooled melted butter to the eggs. Whisk until smooth and well combined.
  5. Stir in the drained whole kernel corn and undrained cream-style corn until combined.
  6. Add both boxes of Jiffy corn muffin mix, sugar, salt, and black pepper. Stir until just combined (a few lumps are okay).
  7. Pour the batter into the prepared baking dish and spread evenly. Tap the dish gently on the counter to release air bubbles.
  8. Bake for 45-55 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the casserole cool for 10-15 minutes before serving.
  10. Cut into squares and serve warm.

Notes

Don’t overmix the batter to avoid a dense texture. Use room temperature ingredients for best results. Let the casserole rest before serving to allow it to set properly. For a less sweet version, reduce sugar to 1/4 cup or omit. For a gluten-free option, substitute Jiffy mix with a gluten-free cornbread mix.
