A warm, comforting casserole featuring fluffy twice-baked russet potatoes loaded with sharp cheddar, crispy bacon, and green onions, perfect for quick weeknight dinners or cozy family meals.

  • 4 tablespoons unsalted butter, softened
  • 1/2 cup sour cream
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 3 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup milk (whole or 2%)
  • Optional: chopped chives or parsley for garnish
  • Optional: substitute sour cream with Greek yogurt for a lighter version

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with butter or nonstick spray.
  2. Place peeled and cubed russet potatoes in a large pot, cover with cold water, add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well in a colander.
  3. Transfer hot potatoes to a mixing bowl. Add softened butter, sour cream, milk, garlic powder, salt, and pepper. Mash until smooth but still a bit fluffy. Add more milk if potatoes feel dry.
  4. Fold in 1 cup of shredded cheddar cheese, crumbled bacon, and sliced green onions. Taste and adjust seasoning if needed.
  5. Spread the potato mixture evenly in the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar cheese over the top.
  6. Bake uncovered for 25-30 minutes, until the top is bubbly and golden brown.
  7. Let cool for 5 minutes before serving. Garnish with extra green onions or fresh herbs if desired.

Notes

If the top browns too quickly, loosely cover with foil halfway through baking. Let the casserole rest before serving to help it firm up. For a vegetarian version, omit bacon and add sautéed mushrooms or caramelized onions. For a dairy-free swap, use olive oil, coconut yogurt, and dairy-free cheese alternatives.
