This rich, creamy green bean casserole features a double-mushroom technique and crispy pan-fried shallots. It’s perfect for make-ahead holiday dinners or cozy weeknight meals, and it started as a happy accident in a chaotic kitchen.

Ingredients

Scale
  • 1.5 pounds (680 grams) fresh green beans, trimmed and halved
  • 1 can (10.5 ounces / 298 grams) cream of mushroom soup
  • 8 ounces (225 grams) fresh mushrooms (cremini or white button), sliced
  • 1/2 cup (120 ml) heavy cream
  • 4 tablespoons (56 grams) unsalted butter, divided
  • 4 large shallots (about 6 ounces / 170 grams), thinly sliced into rings
  • 2 tablespoons (16 grams) all-purpose flour
  • 3 cloves garlic, minced
  • 1 teaspoon (5 grams) salt, plus more for blanching water
  • 1/2 teaspoon (2 grams) black pepper, freshly ground
  • 1 teaspoon fresh thyme leaves (about 4 sprigs), optional
  • 1/4 cup (30 grams) panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil. Fill a large bowl with ice water and set it nearby.
  2. Blanch the green beans: Add the trimmed beans to the boiling water and cook for exactly 3 minutes. Drain immediately and plunge them into the ice water for 2 minutes. Drain again and pat dry with a clean kitchen towel.
  3. Sauté the mushrooms: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the sliced mushrooms and cook without stirring for 3 minutes. Stir and cook for another 3-4 minutes until they release their liquid and it evaporates. Add the minced garlic and cook for 30 seconds until fragrant. Season with a pinch of salt and pepper. Remove from heat and set aside.
  4. Make the creamy sauce: In a medium mixing bowl, whisk together the cream of mushroom soup, heavy cream, 1/4 teaspoon salt, 1/4 teaspoon pepper, and the fresh thyme if using. Stir in the sautéed mushrooms. Taste and adjust seasoning.
  5. Fry the crispy shallots: In a small bowl, toss the sliced shallots with the flour until evenly coated. In the same skillet (wiped clean), melt the remaining 2 tablespoons of butter over medium heat. Add the floured shallots in a single layer (work in batches if needed). Cook for 2-3 minutes per side, stirring occasionally, until deep golden brown and crispy. Transfer to a paper towel-lined plate and sprinkle with a pinch of salt.
  6. Assemble the casserole: Spread the blanched green beans evenly in a 9×13-inch baking dish. Pour the creamy mushroom sauce over the top and gently toss with a spatula to coat every bean. Spread into an even layer. Sprinkle the panko breadcrumbs over the top, then scatter the crispy shallots evenly.
  7. Bake immediately or refrigerate: If baking right away, place the dish in the preheated oven and bake for 25-30 minutes, until bubbly around the edges and golden on top. If making ahead, cover tightly with foil and refrigerate for up to 24 hours. When ready to bake, add 10-15 minutes to the cooking time, removing the foil for the last 10 minutes.
  8. Rest before serving: Let the casserole sit for 5 minutes after baking before serving.

Notes

Don’t skip blanching the green beans—it prevents them from turning mushy. Dry shallots thoroughly before frying to ensure crispiness. Season in layers for best flavor. For extra creamy sauce, add a tablespoon of cream cheese or sour cream. The casserole can be assembled up to 24 hours in advance.
