  • 1/3 cup (75 grams) unsalted butter, melted
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (100 grams) light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups (190 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chocolate chips, 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease any exposed sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter, granulated sugar, and brown sugar. Stir until combined.
  4. Mix in the egg and vanilla extract until fully incorporated and the batter is smooth and glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Gently fold until just combined; do not overmix.
  6. If using mix-ins, fold them in with a few turns of the spoon. Reserve a small handful for topping.
  7. Pour the batter into the prepared pan, spread evenly, and tap gently to release air bubbles. Sprinkle reserved mix-ins on top.
  8. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil after 40 minutes.
  9. Cool in the pan for 10 minutes, then lift out using parchment overhang and transfer to a cooling rack. Cool at least 30 minutes before slicing.

Notes

For best results, use very ripe bananas with brown spots. Do not overmix the batter to avoid a dense loaf. Let the bread cool at least 30 minutes before slicing for clean cuts. Store at room temperature for up to 4 days or freeze for up to 3 months.
