Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper or silicone liners. If using paper liners, spray lightly with nonstick cooking spray.
  2. In a large bowl, whisk together the wet ingredients: pumpkin puree, maple syrup, eggs, milk, melted coconut oil (cooled slightly), and vanilla extract until smooth and well combined.
  3. Add the dry ingredients: rolled oats, pumpkin pie spice, baking powder, and salt. Stir with a spatula until evenly incorporated. Do not overmix.
  4. Let the batter rest for 5 minutes to allow the oats to absorb the liquid.
  5. Fold in any mix-ins (e.g., chocolate chips, pecans) if using.
  6. Scoop the batter into the prepared muffin cups, filling each almost to the top. Use a 1/3-cup measure or ice cream scoop for even portions.
  7. Bake for 20-25 minutes, or until the tops are set and golden brown around the edges. A toothpick inserted in the center should come out clean or with a few moist crumbs.
