Ingredients

Scale
  • 1 boneless, skinless turkey breast (about 3–4 pounds)
  • 1/4 cup pure maple syrup
  • 3 tablespoons whole-grain Dijon mustard
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/4 cup reserved cooking liquid from the slow cooker
  • Salt and pepper to taste
  • Fresh parsley or thyme sprigs (optional, for garnish)
  • Cranberry sauce (optional, for serving)
  • Roasted vegetables or mashed potatoes (optional, for serving)

Instructions

  1. Pat the turkey breast dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the turkey breast for 3-4 minutes per side, until golden brown and crusty.
  3. In a small bowl, whisk together the maple syrup, whole-grain Dijon mustard, smooth Dijon mustard, minced garlic, dried thyme, and a pinch of salt and pepper to make the glaze.
  4. Transfer the seared turkey breast to the slow cooker. Pour the maple-Dijon glaze over the top, spreading it evenly.
  5. Pour the chicken broth around the turkey breast, not directly over the glaze.
  6. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the internal temperature reaches 165°F in the thickest part.
  7. Carefully transfer the cooked turkey to a cutting board. Tent with aluminum foil and let rest for 10-15 minutes.
  8. While the turkey rests, pour the cooking liquid from the slow cooker through a fine-mesh strainer into a measuring cup. Skim off excess fat.
  9. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
  10. Slowly whisk in about 1 1/2 cups of the reserved cooking liquid. Continue whisking until the gravy is smooth and thickens, about 3-5 minutes. Season with salt and pepper to taste.
  11. Slice the rested turkey breast against the grain into thick slices. Arrange on a platter and pour some gravy over the top. Serve remaining gravy on the side.
  12. Garnish with fresh parsley or thyme sprigs if desired.

Notes

Don’t skip searing the turkey—it adds depth of flavor. Use a meat thermometer to ensure the turkey reaches 165°F. Let the turkey rest before slicing to keep it moist. For a thicker gravy, make a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and whisk into simmering gravy.
