  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 tablespoon (15ml) lemon juice
  • Pinch of salt
  • 4 tablespoons (57g) unsalted butter, cold and cubed
  • ½ cup (60g) all-purpose flour
  • ¼ cup (50g) packed light brown sugar
  • ¼ cup (30g) chopped pecans or walnuts (optional)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack.
  2. Peel, core, and chop the apples into ½-inch (1.25cm) chunks. Place in a medium mixing bowl.
  3. To the apples, add the granulated sugar, 1 tablespoon flour, ½ teaspoon cinnamon, lemon juice, and a pinch of salt. Toss until evenly coated.
  4. In a small mixing bowl, combine the ½ cup flour, brown sugar, chopped nuts (if using), ¼ teaspoon cinnamon, and a pinch of salt. Whisk together.
  5. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two forks to cut the butter in until the mixture resembles coarse meal with pea-sized butter pieces.
  6. Divide the apple mixture evenly between two 6-ounce ramekins or spoon into a 6-inch oven-safe skillet. Sprinkle the topping evenly over the apples.
  7. Place the ramekins on the preheated baking sheet. Bake for 25-30 minutes, or until the filling is bubbly and the topping is golden brown. If the topping browns too quickly, tent loosely with foil.
  8. Let the crisps cool on a wire rack for at least 10 minutes before serving. Serve warm, optionally with vanilla ice cream or a drizzle of heavy cream.

Notes

For best results, use cold butter and do not overmix the topping. Let the crisp rest for 10 minutes after baking to allow the filling to set. If using a skillet, start checking for doneness at 20 minutes. To make gluten-free, substitute all-purpose flour with a 1:1 gluten-free baking flour blend containing xanthan gum.
