A quick and easy cocktail that combines crisp prosecco with warm spiced apple cider, perfect for cozy mornings, date nights, or any occasion that calls for a little something special.

  • 2 cups (480 ml) prosecco or dry champagne
  • 12 tablespoons honey or maple syrup (optional, to taste)
  • 2 cinnamon sticks
  • 2 whole star anise pods
  • 34 whole cloves
  • 23 orange slices (for garnish)
  • Fresh apple slices (optional, for garnish)
  • Ice (optional)

Instructions

  1. Warm the cider with spices: Pour 1 cup of apple cider into a small saucepan. Add 1 cinnamon stick, 1 star anise pod, and 3-4 whole cloves. Place over medium-low heat and warm for 5-7 minutes until steaming and fragrant, but not boiling.
  2. Strain the spiced cider: Place a fine-mesh strainer over a small bowl or liquid measuring cup. Pour the warm cider through the strainer to remove the spices. Discard the spices (or save the cinnamon stick for garnish). Let the cider cool for 2-3 minutes.
  3. Sweeten if needed: Taste the strained cider. If desired, stir in 1-2 teaspoons of honey or maple syrup while still warm until dissolved.
  4. Chill the glasses: Place two champagne flutes or wine glasses in the freezer for 2-3 minutes to chill.
  5. Combine the cider and prosecco: In a small pitcher or directly in the glasses, pour 1/3 cup (about 80 ml) of spiced cider into each glass. Slowly pour 2/3 cup (about 160 ml) of prosecco into each glass, pouring gently down the side to preserve bubbles.
  6. Garnish and serve: Add a thin orange slice to each glass. Garnish with a fresh cinnamon stick and a star anise pod. Add a fresh apple slice if desired. Serve immediately.

Notes

For a non-alcoholic version, swap prosecco for sparkling apple cider or ginger ale. For a stronger version, add 1 ounce of bourbon per glass. The spiced cider can be made ahead and stored in the fridge for up to 5 days. Do not mix cider and prosecco until ready to serve to preserve bubbles.
