Cozy Spiced Pear Galette with Vanilla Ice Cream

  • 3 medium ripe pears (Bosc or Bartlett), peeled, cored, and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger (optional)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon all-purpose flour
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (like turbinado) for sprinkling on crust
  • Vanilla ice cream, for serving

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar. Add cold, cubed butter and cut into the flour using a pastry blender or food processor until mixture resembles coarse crumbs with pea-sized bits.
  2. Slowly drizzle ice-cold water into the mixture, stirring gently until dough just begins to hold together. Form dough into a disk, wrap in plastic, and chill in the fridge for at least 30 minutes.
  3. While dough chills, toss sliced pears with sugar, cinnamon, nutmeg, ginger, flour, and lemon juice in a medium bowl. Set aside to marinate briefly.
  4. On a lightly floured surface, roll chilled dough into a roughly 12-inch circle about 1/8-inch thick. Transfer dough to a parchment-lined rimmed baking sheet.
  5. Pile the spiced pear mixture in the center of the dough, leaving about a 2-inch border. Fold edges over the pears, overlapping as needed. Brush exposed dough with beaten egg and sprinkle coarse sugar on top.
  6. Preheat oven to 400°F (200°C). Bake galette for 35-40 minutes until crust is golden and pears are bubbling. If edges brown too quickly, loosely cover with foil halfway through baking.
  7. Let galette cool for 10-15 minutes before slicing. Serve warm with a scoop of vanilla ice cream.

Notes

Keep butter cold for flaky crust. Use lemon juice to prevent pear browning. Chill dough before baking. If edges brown too fast, cover with foil. For gluten-free, substitute almond flour and adjust butter. For dairy-free, use vegan butter and coconut-based ice cream. Rolling dough between parchment sheets helps keep it tidy.
