  • 2 whole star anise pods
  • 2-inch piece fresh ginger, sliced into coins
  • 1 teaspoon allspice berries
  • ¼ cup (60 ml) pure maple syrup (or to taste)
  • ½ cup fresh cranberries (for garnish)
  • 1 orange, sliced into rounds (for garnish)
  • 23 sprigs fresh rosemary (optional, for garnish)
  • Bourbon or dark rum (optional, 1-2 oz per serving)
  • Spiced apple brandy (optional, 1 oz per serving)

Instructions

  1. Toast the spices: Place a large pot or Dutch oven over medium heat. Add cinnamon sticks, whole cloves, star anise, and allspice berries. Stir gently for 2-3 minutes until fragrant. Do not let them burn.
  2. Add the liquids: Pour in apple cider, cranberry juice, orange juice, and water. Add sliced fresh ginger. Stir to combine. Increase heat to medium-high and bring to a gentle simmer (small bubbles around the edges, not a rolling boil).
  3. Simmer and steep: Reduce heat to low, cover pot with lid slightly ajar, and let simmer gently for 15 minutes. Set a timer to avoid over-steeping.
  4. Sweeten to taste: Remove lid, stir, and add maple syrup starting with ¼ cup. Taste and add more if desired, 1 tablespoon at a time. If oversweetened, add a splash of water or cranberry juice.
  5. Strain the punch: Place a fine-mesh strainer over a large heatproof bowl or clean pot. Pour punch through strainer, pressing gently on solids with a spoon. Discard spices.
  6. Garnish and serve: Pour warm punch into serving pot or heatproof mugs. Float fresh cranberries and an orange slice in each mug. Add a rosemary sprig if desired. For adults, add a splash of bourbon or dark rum to individual mugs. Serve immediately.

Notes

Toasting the spices before adding liquid enhances flavor. Do not boil; keep at a gentle simmer. Strain thoroughly to avoid biting into whole spices. Punch base can be made up to 2 days ahead and reheated. For a slow cooker version, combine all liquid ingredients and spices (except maple syrup and garnishes) and cook on low for 3-4 hours or high for 1-2 hours, then sweeten and strain. For a cold version, cool completely and serve over ice with sparkling water.
