  • 1/2 cup (115g) unsalted butter, softened to room temperature
  • 1/4 cup fresh garlic scapes, roughly chopped
  • 1 large garlic clove, minced
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon fine sea salt
  • A pinch of freshly ground black pepper
  • Optional: 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Soften the butter by letting it sit at room temperature for 20-30 minutes until soft but not melted.
  2. Rinse and dry the garlic scapes, then roughly chop into 1-inch pieces. Pulse in a food processor until finely minced but not pureed, or mince finely by hand.
  3. Peel and finely mince one large garlic clove. Adjust amount for milder flavor if desired.
  4. In a mixing bowl, combine softened butter, minced garlic scapes, minced garlic, lemon juice, salt, and black pepper.
  5. Mix thoroughly with a spatula or hand mixer until creamy and smooth. Taste and adjust salt or lemon juice if needed.
  6. If using, fold in finely chopped parsley for freshness and color.
  7. Spoon the mixture onto plastic wrap or parchment paper and roll into a log about 1.5 inches in diameter. Twist ends to seal tightly.
  8. Chill the butter log in the refrigerator for at least 1 hour to firm up.
  9. Slice into 1/2-inch thick rounds and place on hot grilled steak to melt.

Notes

Use softened butter for easy blending; finely mince garlic scapes but do not puree to avoid bitterness. Lemon juice brightens flavor and balances richness. Butter can be made up to 3 days ahead and refrigerated or frozen for up to 3 months. Let butter soften at room temperature before slicing if too hard.
