These creamy homemade strawberry yogurt popsicles with honey are a quick, easy, and refreshing summer treat that balances natural sweetness with a creamy texture.

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup Greek yogurt (full-fat or 2%)
  • 3 tablespoons honey (raw or wildflower)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Rinse about 2 cups (300 g) of fresh strawberries, hull them by removing the green tops, and halve them for easier blending.
  2. Add the strawberries to your blender or food processor along with 1 cup (240 ml) of Greek yogurt, 3 tablespoons (60 ml) of honey, 1 tablespoon (15 ml) of fresh lemon juice, and 1 teaspoon (5 ml) of vanilla extract if using. Blend until mostly smooth but still with a bit of texture—about 30 to 45 seconds.
  3. Taste the mixture and adjust sweetness by adding more honey if needed, a teaspoon at a time. If too thick, add a splash of milk (dairy or plant-based) to loosen for pouring.
  4. Pour the mixture carefully into popsicle molds, leaving a little space at the top for expansion during freezing. Insert sticks and gently tap molds on the counter to remove air bubbles.
  5. Freeze the molds for at least 4-6 hours or preferably overnight. A minimum of 3 hours can work but texture will be better with longer freezing.
  6. To unmold, run warm water over the outside of the molds for 10-20 seconds, then gently pull on the sticks. Serve immediately or store in a freezer-safe bag for up to two weeks.

Notes

Blend just until mostly smooth to keep some texture; avoid over-blending to prevent icy popsicles. Use full-fat yogurt and adequate honey for creaminess. Silicone molds ease unmolding. If popsicles are too icy, increase honey or use full-fat yogurt. Frozen strawberries can be used if thawed slightly. Substitute coconut yogurt and maple syrup for a vegan version.
