A quick and easy creamy chicken and wild rice soup made in the Instant Pot, perfect for busy weeknights. This comforting soup features tender chicken, nutty wild rice, and a velvety broth that tastes like it simmered all day.

  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup wild rice blend
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups low sodium chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Turn Instant Pot to Sauté function (normal setting). Add butter and let melt. Add diced onion, carrots, and celery. Cook 4-5 minutes until onions are translucent and carrots soften.
  2. Stir in minced garlic, dried thyme, and dried rosemary. Cook 30 seconds until fragrant. Add a pinch of salt and pepper.
  3. Pour in about 1/2 cup chicken broth and scrape up any browned bits from the bottom of the pot.
  4. Add remaining 3 1/2 cups chicken broth, wild rice blend, and bay leaves. Nestle chicken thighs into liquid. Do not stir rice into the bottom.
  5. Close lid and set valve to Sealing. Select Manual/Pressure Cook (High) for 25 minutes. Allow natural pressure release for 10 minutes after cooking.
  6. After 10 minutes, carefully turn valve to Venting to release remaining steam. Open lid.
  7. Remove chicken thighs to a bowl and shred with two forks. Discard bay leaves.
  8. Use an immersion blender to pulse soup 4-5 times to thicken slightly, leaving some rice grains intact.
  9. Return shredded chicken to pot. Stir in heavy cream. Let sit 2-3 minutes on Keep Warm. Adjust salt and pepper to taste.
  10. Ladle into bowls and garnish with fresh parsley if desired.

Notes

For a dairy-free version, use full-fat coconut milk instead of heavy cream. If soup is too thick after pressure cooking, stir in extra broth or water. Natural release is essential for proper rice texture. Taste before adding extra salt as broth sodium varies.
