  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams), pounded slightly for even cooking
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 1/2 cup chicken broth (120 ml), preferably low sodium
  • 3/4 cup heavy cream (180 ml)
  • 1/3 cup grated Parmesan cheese (about 33 grams)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and freshly ground black pepper to taste
  • A handful of fresh basil, chopped (optional, for garnish)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap or parchment paper. Gently pound to an even thickness of about 1/2 inch (1.25 cm) using a meat mallet or rolling pin. Season both sides with salt, pepper, and dried Italian herbs.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil to keep warm.
  3. Reduce heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Stir frequently for 1-2 minutes until fragrant and slightly softened, being careful not to burn the garlic.
  4. Pour in 1/2 cup chicken broth to deglaze the pan, scraping up browned bits. Add 3/4 cup heavy cream and 1/3 cup grated Parmesan cheese. Stir gently to combine and let sauce simmer and thicken for 3-4 minutes.
  5. Stir in 1/4 teaspoon red pepper flakes (if using) and adjust salt and pepper to taste. The sauce should coat the back of a spoon with a velvety texture.
  6. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the top and simmer together for 2-3 minutes to meld flavors and warm through.
  7. Sprinkle freshly chopped basil over the dish just before serving.

Notes

If sauce is too thick, add a splash more chicken broth or cream. If too thin, simmer longer. Use a meat thermometer to avoid overcooking chicken. Fresh garlic is preferred over garlic powder for best flavor. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast. Adding fresh basil at the end brightens the dish.
