These Creamy Peach Cobbler Overnight Oats are the breakfast equivalent of a warm hug—creamy, sweet, with a crunchy cobbler topping, all made with five minutes of prep the night before. Perfect for busy mornings when you need a grab-and-go meal that tastes like dessert.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole or 2%)
  • ½ cup (120g) plain Greek yogurt
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 can (15 oz / 425g) peaches in juice, drained and chopped, ¼ cup (60ml) juice reserved
  • 4 full sheets graham crackers, crumbled
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 tablespoon (12g) brown sugar
  • Pinch of cinnamon (for topping)

Instructions

  1. Drain the canned peaches, reserving ¼ cup of the juice. Chop the peaches into small bite-sized pieces.
  2. In a medium mixing bowl, whisk together rolled oats, milk, Greek yogurt, honey or maple syrup, vanilla extract, cinnamon, and salt until smooth.
  3. Add the reserved peach juice and whisk again to combine.
  4. In a small bowl, mix crumbled graham crackers, melted butter, brown sugar, and a pinch of cinnamon. Toast in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until golden and fragrant. Let cool completely.
  5. Layer the oat mixture and chopped peaches in mason jars or airtight containers, starting and ending with oats. Distribute peaches evenly.
  6. Sprinkle the cooled graham cracker topping over the final oat layer. Do not stir.
  7. Seal jars and refrigerate for at least 6 hours or overnight.
  8. Serve cold or microwave for 45-60 seconds for a warm breakfast. Stir before eating.

Notes

For best texture, use rolled oats (not quick or steel-cut). Reserve the peach juice for maximum flavor. Store the cobbler topping separately to keep it crunchy. Oats taste even better on day 2-3 as flavors meld. To freeze, omit topping and freeze up to 3 months; thaw overnight in fridge.
