  • 1 cup (240ml) milk (whole milk preferred, almond or oat milk for dairy-free)
  • ½ cup (120g) Greek yogurt, plain or vanilla
  • 1 medium fresh peach, diced (frozen peaches can be used)
  • 1 to 2 tablespoons honey or maple syrup
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold, cubed butter
  • 3 tablespoons brown sugar (light or dark)
  • ¼ cup (30g) all-purpose flour (almond flour for gluten-free)
  • Pinch of salt

Instructions

  1. In a medium bowl, combine rolled oats, milk, Greek yogurt, ground cinnamon, honey or maple syrup, and vanilla extract. Stir until well mixed (about 3 minutes).
  2. Gently fold in the diced fresh peach. Drain excess juice if peaches are very juicy to avoid watery oats.
  3. Cover the bowl or transfer the mixture evenly into mason jars. Seal and refrigerate overnight or for at least 6 hours.
  4. Preheat oven to 350°F (175°C). In a small bowl, mix brown sugar, all-purpose flour, ground cinnamon, and a pinch of salt.
  5. Add cold, cubed butter to the dry ingredients. Rub the butter into the mixture with fingers or a fork until coarse crumbs form.
  6. Spread the streusel mixture evenly on a parchment-lined baking sheet. Bake for 12-15 minutes, stirring once halfway through, until golden brown and crisp. Let cool completely.
  7. When ready to serve, stir the oats and top with a generous sprinkle of cinnamon streusel.

Notes

If oats are too thick in the morning, stir in a splash of milk to loosen. The cinnamon streusel can be made ahead and stored in an airtight container for up to a week. For dairy-free, substitute milk and yogurt with plant-based alternatives and butter with coconut oil or vegan butter. Use gluten-free oats and almond or oat flour for gluten-free version. Stir oats before serving to redistribute flavors.
