A creamy, protein-packed oatmeal meal prep that comes together in under 15 minutes. Perfect for busy mornings—just grab a jar from the fridge, microwave, and go.

Ingredients

  • Rolled oats, 2 cups (180g)
  • Milk, 2 cups (480ml)
  • Water, 1 cup (240ml)
  • Vanilla protein powder, 2 scoops (about 60g)
  • Creamy peanut butter, ½ cup (130g)
  • Honey or maple syrup, 2 tablespoons (30ml)
  • Chia seeds, 2 tablespoons (20g) (optional)
  • Salt, ¼ teaspoon
  • Dark chocolate chips, 2 tablespoons (optional)
  • Sliced banana (optional)
  • Chopped peanuts (optional)
  • Cinnamon, ½ teaspoon (optional)

Instructions

  1. In a medium saucepan, whisk together 2 cups milk, 1 cup water, and 2 tablespoons honey or maple syrup until dissolved. Turn heat to medium-high.
  2. Slowly sprinkle in 2 scoops vanilla protein powder while whisking constantly to prevent clumps. Whisk until fully incorporated (about 30 seconds).
  3. Add 2 cups rolled oats and ¼ teaspoon salt. Stir until evenly distributed.
  4. Bring to a gentle simmer, then reduce heat to medium-low. Cook for 5-7 minutes, stirring occasionally, until oats are tender and mixture has thickened.
  5. Remove from heat. Add ½ cup creamy peanut butter and stir until fully melted and incorporated. If using chia seeds, stir them in now.
  6. Divide oats evenly among 4-5 meal prep jars (about ¾ cup each). Let cool on counter for 10 minutes before sealing.
  7. If adding toppings like chocolate chips, chopped peanuts, or cinnamon, sprinkle on top now. Add fresh banana just before eating.
  8. Seal jars and refrigerate for at least 4 hours, preferably overnight.

Notes

For best texture, add protein powder to cold milk before heating. Oats will continue to thicken as they cool and refrigerate. If too thick after refrigeration, add a splash of milk before reheating. Oats taste even better on day 2 or 3.
