Ingredients

Scale
  • 1 large butternut squash (about 3 pounds), peeled, seeded, and cubed into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 medium yellow onion, roughly chopped
  • 3 cloves garlic, smashed
  • 4 cups vegetable broth (or chicken broth)
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg, freshly grated if possible
  • 12–15 fresh sage leaves
  • 2 tablespoons butter (salted or unsalted)

Instructions

  1. Preheat your oven to 400°F (200°C). Give it a full 15 minutes to get hot.
  2. Prep the squash: Cut off both ends, stand upright, slice off skin in strips. Cut in half lengthwise, scoop out seeds, and cut flesh into 1-inch cubes.
  3. Toss and roast: Spread cubed squash on a baking sheet. Drizzle with 2 tablespoons olive oil, sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to coat, spread in a single layer. Roast for 25-30 minutes, flipping halfway, until edges are golden brown and caramelized.
  4. Start the aromatics: While squash roasts, heat a large pot over medium heat. Add a splash of olive oil, then chopped onion. Cook 5-6 minutes until soft and translucent. Add smashed garlic and cook 1 minute until fragrant.
  5. Combine and simmer: Add roasted squash to pot with onions and garlic. Pour in 4 cups vegetable broth. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
  6. Blend until smooth: Remove pot from heat. Use an immersion blender to blend directly in the pot until smooth. If using a regular blender, let soup cool 10 minutes, then blend in batches, filling blender halfway each time.
  7. Add cream and seasonings: Return blended soup to pot over low heat. Stir in 1/2 cup heavy cream, 1/4 teaspoon nutmeg, and remaining 1/2 teaspoon salt. Taste and adjust salt and pepper as needed.
  8. Make crispy sage: In a small skillet, melt 2 tablespoons butter over medium heat. Add sage leaves in a single layer. Cook 30-45 seconds per side until dark green and crispy. Drain on paper towel.
  9. Serve: Ladle soup into bowls. Top with crispy sage leaves and a drizzle of cream if desired. Sprinkle with black pepper.

Notes

Don’t skip roasting—it caramelizes the squash for deep flavor. Cut squash evenly for even roasting. Taste as you go and adjust salt. Let soup cool slightly before adding cream to prevent curdling. Make extra crispy sage as they disappear quickly. Soup tastes even better the next day.
