  • Pinch of cayenne pepper (optional)
  • 1 ripe mango, diced
  • 1/2 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1 avocado, sliced (optional)
  • Crema or sour cream for drizzling (can substitute Greek yogurt)

Instructions

  1. In a large bowl, toss the peeled and deveined shrimp with olive oil. Sprinkle smoked paprika, garlic powder, cumin, chili powder, salt, pepper, and cayenne pepper (if using). Mix well to coat evenly. Takes about 5 minutes.
  2. While shrimp marinates, combine diced mango, chopped red onion, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt in a medium bowl. Stir gently and let sit at room temperature for about 10 minutes.
  3. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  4. Arrange shrimp in a single layer in the air fryer basket. Cook for 6-8 minutes, shaking the basket halfway through. Shrimp should be opaque and crispy.
  5. Warm tortillas on a skillet or over a low flame for about 1 minute per side until soft and pliable.
  6. Assemble tacos by placing shrimp on tortillas, topping with mango salsa, shredded cabbage, sliced avocado, and a drizzle of crema or sour cream.
  7. Serve immediately with lime wedges.

Notes

Do not overcrowd the air fryer basket to ensure shrimp crispiness. Use just enough olive oil to lightly coat shrimp. Warm tortillas before assembling for best texture. Mango salsa tastes better after sitting for 30 minutes. Leftover shrimp can be reheated in the air fryer at 350°F for 2-3 minutes to regain crispness. For dairy-free, substitute crema with coconut yogurt or omit.
