  • 1 cup (120g) powdered sugar
  • 1 ½ teaspoons ground cinnamon
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Peel, core, and dice 2 medium apples into small, bite-sized pieces. Set aside.
  2. In a large bowl, whisk together 1 cup all-purpose flour, 1 ½ teaspoons baking powder, 3 tablespoons sugar, ¼ teaspoon salt, and 1 teaspoon ground cinnamon.
  3. In a smaller bowl, beat 1 large egg with ½ cup milk and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined. Fold in the diced apples carefully.
  5. Pour vegetable oil into a skillet to a depth of about 2 inches. Heat over medium heat to 350°F (175°C).
  6. Using a spoon or small ice cream scoop, drop spoonfuls of batter into the hot oil, spacing them apart. Fry for 2-3 minutes per side until golden and crispy.
