  • 12 medium-sized fresh jalapeños
  • 8 ounces (227 grams) cream cheese, softened
  • 1 cup (100 grams) sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 12 slices thin-cut bacon
  • Ranch dressing for serving (store-bought or homemade)
  • Optional: smoked paprika or cayenne pepper for extra heat
  • Optional: chopped fresh chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out the seeds and membranes with a small spoon. Rinse and pat dry.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar, and garlic powder. Stir until smooth and well mixed. Add smoked paprika or cayenne if desired.
  4. Spoon the cheese mixture into each jalapeño half, pressing gently to fill without overstuffing.
  5. Wrap one slice of bacon around each stuffed jalapeño half, overlapping slightly. Secure with a toothpick if needed.
  6. Place each bacon-wrapped popper seam-side down on the prepared baking sheet or rack.
  7. Bake for 20–25 minutes, flipping halfway through with tongs, until bacon is crispy and filling is bubbly. Watch closely in the last 5 minutes to avoid burning.
  8. Remove from oven and let poppers rest for 5 minutes before serving.
  9. Arrange on a platter with a bowl of ranch dressing for dipping. Sprinkle chopped chives on top if desired.

Notes

Wear gloves when handling jalapeños to avoid skin irritation. Remove seeds and membranes to control spice level. Wrap bacon tightly and secure with toothpicks to prevent unraveling. Flip poppers halfway through baking for even crispiness. If bacon isn’t crisping evenly, finish under broiler for 1–2 minutes. Let poppers rest 5 minutes before serving to set filling. Reheat leftovers in oven at 350°F for 8–10 minutes to maintain crispiness.
