  • 1 medium head of cauliflower, cut into bite-sized florets (about 4 cups)
  • 3/4 cup all-purpose flour (or gluten-free all-purpose blend)
  • 3/4 cup water (or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo hot sauce (preferably Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted (or vegan butter)
  • 1 tablespoon honey or maple syrup (optional)
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks (optional)
  • Chopped fresh parsley or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the cauliflower and cut into bite-sized florets. Pat them dry with a clean towel.
  3. In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Add water (or milk) and whisk until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Add the dried cauliflower florets to the bowl with the batter. Toss until every floret is evenly coated.
  5. Place the coated florets on the prepared baking sheet in a single layer, making sure they aren’t touching.
  6. Bake for 20 minutes. At the 10-minute mark, flip each floret with tongs so they brown evenly.
  7. While the cauliflower bakes, whisk together the hot sauce, melted butter, and honey (if using) in a small bowl. Set aside.
  8. After 20 minutes, remove the baking sheet from the oven. Use tongs to transfer the baked florets to a large bowl. Pour the buffalo sauce over them and gently toss until every piece is coated.
  9. Return the sauced florets to the baking sheet and bake for another 5-7 minutes, until bubbly and slightly charred at the edges.
  10. Remove from the oven and let cool for 2 minutes. Transfer to a serving platter, garnish with chopped parsley or green onions, and serve with ranch or blue cheese dressing and celery sticks.

Notes

For extra crispiness, use rice flour instead of all-purpose flour. To make vegan, use vegan butter and maple syrup. For gluten-free, use a gluten-free all-purpose flour blend. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 400°F oven or air fryer for 5-7 minutes.
