Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets (about 6 cups)
  • 1 cup all-purpose flour (or ¾ cup rice flour + ¼ cup cornstarch for extra crispiness)
  • 1 cup water (or light beer for a lighter batter)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup hot sauce (e.g., Frank’s RedHot Original)
  • ¼ cup unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • Ranch or blue cheese dressing (for serving)
  • Celery and carrot sticks (for serving)
  • Fresh chives or green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 450°F (232°C). Place a wire rack on a rimmed baking sheet and spray it lightly with non-stick cooking spray.
  2. Wash the cauliflower and cut into uniform bite-sized florets. Pat them very dry with a clean kitchen towel or paper towels.
  3. In a large bowl, whisk together the flour (or rice flour and cornstarch), garlic powder, onion powder, smoked paprika, salt, and pepper. Add the water (or beer) and whisk until smooth. The batter should be the consistency of thin pancake batter.
  4. Add the dried florets to the bowl with the batter. Gently toss until every piece is evenly coated.
  5. Using a fork or tongs, lift each floret out of the batter, allowing excess to drip off. Place them on the prepared wire rack in a single layer, ensuring they aren’t touching.
  6. Bake for 20 minutes until the cauliflower starts to turn golden brown on the edges.
  7. Remove from the oven and carefully flip each floret. Return to the oven and bake for another 10-15 minutes until deeply golden and crispy.
  8. While the cauliflower bakes, combine the hot sauce, melted butter, honey, and Worcestershire sauce in a small saucepan. Warm over low heat, whisking until smooth. Do not let it boil. Keep warm.
  9. Once the cauliflower is out of the oven, transfer to a large bowl. Pour the warm buffalo sauce over the top and gently toss to coat.
  10. Transfer to a serving platter, sprinkle with chopped chives or green onions, and serve immediately with ranch or blue cheese dressing and celery sticks.

Notes

Pat the cauliflower very dry to avoid sogginess. Use a wire rack for maximum crispiness. Toss in sauce right before serving to keep the crust crunchy. For extra crunch, let the cauliflower cool for 5 minutes after the first bake, then bake for another 10 minutes before saucing.
