A creamy, crunchy green bean casserole made from scratch with fresh green beans, a velvety cream sauce, and a crispy shallot topping. Perfect for holiday dinners or any special occasion.

Ingredients

Scale
  • 1.5 pounds fresh green beans, trimmed and halved
  • 3 tablespoons unsalted butter, divided
  • 4 medium shallots, thinly sliced (about 1 cup sliced)
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup low-sodium chicken or vegetable broth
  • 3 cloves garlic, minced
  • 1 teaspoon salt, plus more for blanching water
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)
  • 1/4 teaspoon freshly grated nutmeg
  • 3 medium shallots, thinly sliced into rings (about 3/4 cup, for topping)
  • 1/4 cup all-purpose flour (for coating shallots)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt (for topping)
  • 1/8 teaspoon black pepper (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Blanch the green beans: Bring a large pot of salted water to a boil. Add green beans and cook for exactly 3 minutes. Transfer to an ice water bath to stop cooking. Drain and pat dry.
  3. Make the crispy shallots: Toss shallot rings with flour, salt, and pepper. Spread on prepared baking sheet, drizzle with olive oil, and roast for 10-12 minutes until golden and crispy. Set aside.
  4. Make the cream sauce: Melt 2 tablespoons butter in a large skillet over medium heat. Add sliced shallots and cook 4-5 minutes until softened. Add garlic and cook 30 seconds.
  5. Sprinkle flour over shallots and stir for 1-2 minutes. Slowly whisk in milk, heavy cream, and broth. Simmer for 3-4 minutes until thickened.
  6. Season sauce with salt, pepper, thyme, and nutmeg. Adjust to taste.
  7. Add blanched green beans to the sauce and toss to coat evenly.
  8. Transfer green bean mixture to a 9×13-inch baking dish. Top with crispy shallots, panko, Parmesan, and dot with remaining 1 tablespoon butter.
  9. Bake for 15-18 minutes until bubbly and golden. Broil for 1-2 minutes if needed for extra browning.
  10. Let rest for 5 minutes before serving. Garnish with fresh thyme if desired.

Notes

Don’t skip blanching the green beans—it sets their color and ensures tender-crisp texture. Watch the roasted shallots carefully as they can burn quickly. For a gluten-free version, use gluten-free flour and panko. For dairy-free, use vegan butter, oat milk, and coconut cream. The cream sauce can be made up to 2 days ahead; the crispy shallots are best made fresh.
