  • 2 cups shredded whole milk mozzarella cheese
  • 1/2 cup (1 stick) unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 2 tablespoons finely chopped fresh parsley or basil (optional)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine melted butter, minced garlic, chopped parsley, Parmesan, salt, and pepper. Mix well and set aside.
  3. Using a serrated knife, carefully score the bread into a grid pattern with slices about 1 to 1.5 inches apart vertically and horizontally, stopping just before the bottom crust to keep the loaf intact.
  4. Gently pry open the slices and stuff shredded mozzarella into each cut.
  5. Brush the entire loaf generously with the garlic butter mixture, making sure some seeps into the crevices.
  6. Place the loaf on a baking sheet or oven-safe skillet and bake for 15-20 minutes until the cheese is melted and the bread is warmed through.
  7. Switch the oven to broil and broil for 2-3 minutes until the top is golden and crispy, watching closely to avoid burning.
  8. Remove from oven and let rest for 2-3 minutes before serving.

Use whole milk mozzarella for best stretchiness. Score the bread without cutting all the way through to maintain structure. Watch the bread carefully during broiling to avoid burning. Let the bread rest briefly after baking to allow cheese to thicken slightly. For gluten-free or dairy-free versions, substitute bread and cheese accordingly.
